~ Day Six~

Here are some of the local birds who hang out at the hotel. I couldn't find their names but they look like a hookbill of some sort. Some of the prettiest birds that were around the hotel were the red-crested cardinals. There were also some with bright yellow-orange heads.

Besides koi, there were also swans swimming in the hotel lagoons.

Inside the lobby, there were a couple of colorful and talkative Macaws

My favorite was this playful Cockatoo

There was always a lot going on in the lobby. Here you could make your own lei.

Here I am going down the 150 foot waterslide

Jeff's turn. He went down on his back so he was really flying. I did too, but not for the photo.

Our favorite spot- a covered cabana chair for two

Tomorrow: I'll show you photos of us snorkeling, seeing some more sights and of the luau we went to.

~ Recipe of the Day ~

Hawaiian Chicken Pupus (Appetizers)

4 boneless, skinless chicken breast halves
1/2 cup bottled teriyaki glaze with honey and pineapple
2 tsp minced fresh ginger root
1 1/2 tsp. sesame oil
1 clove garlic, minced
2 Tbsp toasted sesame seeds
*18- 10 inch bamboo skewers

Cut chicken into strips about 1 inch wide and thread onto skewers.
Combine teriyaki glaze, ginger, sesame oil and garlic; brush on chicken.

Grill skewers 4 to 5 inches from hot coals, 8 to 10 minutes or until chicken is no longer pink in center,
turning skewers over once and brushing with remaining glaze.
Sprinkle both sides of skewers with sesame seeds.

Makes 6-8 appetizer servings.

*Soak bamboo skewers in water 20+ minutes to prevent burning.
